The Chettiars of Tamil Nadu or the region of Madras were the pioneers of the pepper trade and hence prospered thereby adding a variety of meats into their cuisine too.
However, the heat in their food was evident with the use of crushed pepper corns. This masala takes some of the varied qualities of the region and is made for you to use in curries, sauces and as a rub if you so choose.
Seasoning is left to your discretion of course but use like any of our masalas and tailor to your own tastes.

We believe the best method of storing spices to increase their longevity:
1. No light, Store in Darkness.
UV/Natural light chemically degrades spices; Your spices are packed in
DARK, SEALED Tins.
2. Consistent Storage Temperature 24/7.
Spices contain volatile essential oils, a consistent storage temperature will help prevent
the oils from escaping.
3. We recommend storing your spices in the Fridge for the best results.
Dark & Consistent Storage Temperature.
Each Variety is prepared by hand to the highest possible standards before being packed in Environmentally friendly tins.
